At Cayo Espanto — a private seven-villa island off the southern tip of Ambergris Caye in Belize — guests decide the details of their customized experience. Staff, who outnumber guests 2-to-1, carry out their wishes. For starters, “Some guests like a schedule; and others like to see how they feel when they wake,” says property manager David Benzaquen.
Activities can be scheduled weeks in advance or arranged within the hour, and include scuba diving, fishing, cave tubing, guided kayaking and enjoying a day at sea with a sunset barbecue on a remote beach.
One of the most flexible areas is cuisine. Four chefs create per-person menus based on the preferences listed on a 25-question survey. “We don’t have a set menu,” says Benzaquen. After you’ve noted whether you prefer caviar or cheeseburgers, sorbet or cheesecake, chefs create four dinner options with wine pairings.
