Able to accommodate as many as 930 guests, Mars is a bit on the smaller side, which means it can visit some destinations that other, larger ships can’t. Best of all, there’s a greater attention to detail and luxury, as regular guests will readily admit is one of the best aspects of this brand—right up there with the phenomenal, curated itineraries.

The included excursions are well thought out, celebrating the culture and activities of each city. During the Viking Homelands cruise itinerary on the Viking Mars, the 15-day voyage begins in Stockholm and goes on to visit Aland Islands in Finland, Gdansk in Poland, Bornholm in Denmark, Berlin in Germany, Copenhagen and Aalborg in Denmark, and multiple ports in Norway (Oslo, Stavanger, Eidfjord and Bergen).

What to Expect on Board

All journeys begin with the accommodations, and guests will have no shortage of beautiful views since every luxurious guest room has a balcony, which makes for unforgettable moments while sipping coffee in the morning or admiring the sunset after a long day of exploring. The staff is incredibly kind and helpful, always willing to bring you what you need or make your stay more relaxed. The rooms are sizable, with comfortable beds, plenty of storage for clothing, a big bathroom, and lots of space to move around.

The Mars has so many great amenities, including a hair salon, high end fitness center, shops throughout the boat, the Nordic Spa with its own private pool (in addition to an infinity pool), bars, and a rooftop pool. And then there are the premium dining options, including specialty restaurants like Manfredi’s Italian Restaurant for incredible crisp calamari, shrimp and linguine, and bone in ribeye with wine pairings and The Chef’s Table with master sommeliers and culinary experts curating a tasting menu for guests. For an educational experience, the Kitchen Table is an interactive culinary school and a wonderful way for guests to learn from the greats.

As for the Nordic Spa, there is a wide variety of treatments available, in addition to a steam room, sauna, and even a snow grotto. As you’re traveling to each port, you can enjoy the offerings of the spa, watch live singers, bands, performances, discussions, or grab an incredible espresso martini at the bar.

Into the Cities

In addition to the included excursions and activities that give you a taste of the city, guests generally have plenty of time to explore on their own. However, for an elevated experience, the paid excursions offer something more intimate and unique.

In Stockholm, start with the Swedish meatballs before ordering a banana, curry, and ham pizza so you’re full ahead of the Viking tour, “Old Town by Foot,” on which the group will discover highlights in Gamla Stan. During the Panoramic Mariehamn Tour in Mariehamn, Åland Islands, try the black salt licorice candies that are made in house and still warm, or enjoy a gin sample and snacks during the Tastes of Aland after walking through the Huvudfästet and Kastelholm Castle.

After sailing the Swedish coast, the boat docks in Gdańsk, Poland, where guests can discover why the city is known for amber jewelry and goods, stunning architecture, and incredible food and drinks. Guests are invited to “Discover Culinary and Precious Treasures of Gdańsk,” through which they’ll meet an Amber Specialist, make their own pierogies before sitting down as a group to taste them, explore the old town by foot, and taste Goldwasser, a liqueur made in Gdańsk that dates to 1598.

Next up, Bornholm, Denmark with a tour through Viking of the local fishing village and Nylars Church. A quick stop to explore the city and the architecture and then on to Germany.

The boat anchors in Warnemünde with options to explore the nearby area of Warnemünde or travel by train to Berlin (about two hours each way). You can take a tour or do “Berlin Your Way,” mapping out your route for shopping, taking in the local public art and murals, and trying local foods like currywurst at Curry 61. You’re escorted by a guide throughout the entire train process that brings you to the city center. There, you’ll board a bus to take in iconic sights that can’t be missed when visiting the city like the Reichstag Building, Brandenburg Gate, Jewish Memorial, Berlin Wall, and more before giving you a meeting point and letting you enjoy hours of free time in the city.

The next stop is Copenhagen, Denmark. The bright colors along the canal, smell of waffle cones baking in the air, and friendly people exploring the city by foot and by bike bring all the good vibes on a sunny Denmark day. After walking along the canal, stop into Vaffelbageren Nyhavn to try black licorice ice cream on one of their famous waffle cones on your walk to the Little Mermaid Statue.

For a light lunch, Løgismose Vin, Mad & Delikatesser has plenty of small plates to go that you can share like freshly made spreadable salmon salad and duck pate with crisp baked bread. The Copenhagen Food Lover’s Tour offered as a paid excursion through Viking is an incredible way to discover the local cuisine, from chocolates, cheese, and liqueur, to herring and Smørrebrød. If you’re a foodie, this tour is a must!

After one more quick stop in Ålborg, Denmark, to explore the city discovered by Vikings in the 900s and visiting the Old Town, Ålborghus Castle, Utzon Center, and Vor Frue Kirke, the ship sets sail for Norway, starting with an overnight in Oslo. Explore the first port in Norway through the “Oslo Highlights and Vigeland Park,” included through Viking. See important sights like City Hall, the National Theater, Royal Palace, Holmenkollen ski jump, and more before a guided walk through Vigeland Park to view the sculptures.

With extra time in Oslo, Norway, check out the saunas, which, when combined with a cold plunge, are a valuable tradition in Scandinavian culture, not only for health benefits, but for socialization. Right where the boat docks, you’re a short walk from Kok, floating saunas where you can plunge into the fjord. It’s an incredible experience that will leave you relaxed—and probably with a few new friends. After, grab drinks and a bite to eat at Salt.

When the boat docks in Stavanger, Norway, the “Taste of Stavanger” tour is a great way to learn about the local food and culture. Take it one step further with Viking’s “The Kitchen Table” tour, on which guests can actually explore local grocery stores, butchers, and food markets to collect high quality meats, cheeses, fish, and other ingredients, while learning about the food culture and tasting treats along the way. When you get back to the ship, you’ll have some time to relax and unwind before meeting for an intimate dining experience that brings all the ingredients you collected to life.

Get ready for the most incredible views in Eidfjord, Norway. During the “Viking Excursion: Vøringsfossen Waterfall and Eidfjord Cruise,” drive through the charming village to Vøringfossen Waterfall. The 550-foot natural landmark on Måbødalen Canyon is an amazing sight to see, and you’ll even have time to grab a cup of coffee and walk around to really appreciate every angle of the gorge. After exploring the village, the group will board a catamaran to get panoramic views of the fjord. When you return, stop into Vik Bakeri for some sweets.

The last stop is in Bergen, Norway, well-known for fish markets where visitors and locals can buy fresh shellfish, caviar, fish, and prepared foods. Everyone can indulge in chowders, local fish cakes, oysters, and more before exploring the town by foot on their own or on a variety of excursions, including “A Taste of Bergen.” Browse through the local fish market to try a variety of delicacies after walking through the town with a local guide.

Florida’s Space Coast was once a popular destination in the late 1960s thanks in part to Kennedy Space Center and the excitement of the space race. This destination was famous for many things, including the beaches, rockets, and even lagoons that rivaled the classic Florida sand. But things changed in the ensuing decades, especially as Orlando’s theme parks emerged, and this spot became less prevalent as other regions of the state boomed.

For the last two decades, the Space Coast’s best minds have been working on reconstructing the destination’s image and offerings, trying to bring back its golden glory of yesteryear. While going back in the past is not possible, these efforts have been producing some fantastic attractions that are making it a must-visit location for new generations.

Beachside Hotel and Suites

Hotels are sometimes the things that can make or break a destination, and they don’t always have to be five stars. The Beachside Hotel and Suites is the ideal place to bring your family and camp out. It doesn’t lose itself in frills that the coast isn’t known for, instead embracing its past—albeit with modern amenities perfect for larger families.

The rooms are decked out in 60s vintage-inspired décor, while the wrap-around lazy river is an excellent addition if you want to avoid walking down to the beach. While this boutique hotel isn’t beachfront, it’s only minutes away from the water, and it does partner with organizations like Cocoa Beach Surf Company for private surf lessons. I did a class here and found it perfect since the water was choppy enough to produce some waves but not aggressively tricky, where a beginner like myself would be overwhelmed. The instructors are hands-on and work at your pace, which is excellent for different types of learners.

4th Street Fillin Station

The 4th Street Fillin Station envelopes the new vibe of Cocoa (and the Space Coast) in a way that seems welcoming to anyone. As its name implies, it’s built from an old gas station and is one of the area’s most diverse drinking and gastronomy spots. They have over 26 craft beers available and an expansive menu of plant-based, gluten-free, and other options available.

Some of their highlights are the street tacos and homemade ice cream. The space is partially outside, which makes it fun during good weather moments. Most of the walls are covered in art murals, and there’s a sense of modernity there that feels like a breath of fresh air when you’re around so much history.

Kennedy Space Center

This one is a classic but still an essential part of what makes the Space Coast exciting and relevant. The Kennedy Space Center is the area’s biggest and most popular attraction. Opened in the early 60s, the Kennedy Space Center was and still is an integral part of The National Aeronautics and Space Administration.

Countless explorations started there, and the first crewed ship that landed on the moon launched from here in 1969. Outside of history, there are many things to do if you’re visiting. They have an incredible rocket museum and a revolving list of seasonal programs. There are countless other attractions to discover, but the most popular is watching a rocket take off. Make sure to check their website for a calendar.

Florida-Adventurer

If you’ve ever been to Florida, you know there are many things to do outdoors. One thing folks need to learn more about is its canals, filled with diverse ecosystems and different animals ranging from alligators to dolphins and manatees. Florida-Adventurer is a local company that offers tours of the channels, and one of their most popular is the bioluminescence kayak tour in the Haulover Canal. I did this tour not too long ago, and it was one of the best bioluminescence tours I’ve ever done.

Usually done after the sun goes down, this tour takes you around the canal, as the guide points out different animals and locations. It’s just a short distance from the Space Coast, and the best time to see the water glowing is between June and September. It’s a great activity that everyone should experience at least once. Make sure to bring a lot of mosquito repellent, because the pests are aggressive near the water and after dark.

Brevard Zoo

Any trip to the Space Coast should end at the Brevard Zoo. This family-friendly attraction has been inviting guests to visit since 1994. It is a great way to teach kids about Florida’s natural habitat. They even have a Sea Turtle Healing Center that opened in 2014 (not open to the public) that works with the native sea turtle population, considering Broward’s beaches are the largest nesting area for sea turtles in the United States.

While the Space Coast holds on to its history, it also allows itself to evolve and change with time. The next time you plan a vacation to Central Florida, check out what this destination can offer. It might surprise you.

Costa Rica is undoubtedly one of the most beautiful countries in Central America. It is full of lush tropical forests, pristine beaches, and some of the region’s healthiest and most delicious gastronomy. Known as a North American traveler’s paradise, its natural beauty and seemingly endless adventure has inspired many people to permanently move there, especially because of its status as a Blue Zone. (If an area is designated a Blue Zone, the population there is known to live longer than average due to diets, physical exercise, and other factors.)

On a trip to Costa Rica, I stayed at Tabacón Thermal Resort and Spa, which boasts what I consider some of the best aspects of the country. It focuses on gastronomy, wellness, and so much more, but I also visited during the holidays, and it felt like I was stepping into a summer paradise even though we were right in the middle of December.

Here are seven reasons why this is the perfect place to spend your next winter holiday.

It is Warm

Weather in Costa Rica is split into two seasons (much like the Caribbean): dry and rainy. Both seasons are moderately warm, and if you’re looking to escape moody rainstorms, you should head over during the dry season, which ranges from December through April. I find the rainy season fun, too, but you risk spending a week under a rain cloud that may or may not damper your holiday.

The Natural Hot Springs

Since the resort is partially attached to the Arenal Volcano, it has direct access to the natural hot springs that come from it. This has several wellness benefits but is also the perfect place to relax with a partner on a honeymoon. The thermal spa is a different part of the resort, but if you stay in the hotel, you can access it for free.

It is known as the most extensive network of hot springs in Costa Rica, and it shows. Temperatures range from 72 to 105 degrees. Guests of the resort also have access to the adult-only Shangri-La Gardens, which I consider one of the best parts of the thermal hot springs park.

The Gastronomy Scene is on Another Level

While there, I had the opportunity to try a few of the restaurants at the resort, and they blew my socks off. Restaurants like Tucanes and Ave were stellar, with the latter having various vegan and vegetarian options. The vegan ceviche was one of the best I’ve ever had. The 7-course tasting menu at Tucanes was like a journey through Costa Rican gastronomy history, each dish made with locally sourced ingredients. The somewhat pre-set menu is split into two parts, from the sea, and from the garden, and highlights for me included the Grilled Pacific octopus and Basque cheesecake.

If you need a more intimate dining experience, check out the Ephemeral table. This outdoor bungalow is set in the middle of the tropical forest, and merely the ambiance alone will entice you. Considered the chef’s table of the resort, it boasts a six-course menu. Each dish is supposed to transport you to different parts of Costa Rica alongside a diverse wine and beer pairing. You must make reservations in advance, but this table is the perfect place for any traveler to dine.

Don’t Forget about the Drinks

The resort has four bars, and my favorite is the Bosque bar. Bosque, in Spanish, means forest, and this bar feels like you’re right in the middle of one. There’s a steady stream of cocktail-making classes here, so watch out. Some of the highlight signature cocktails include the Caturra y Teobroma, made with rum, beer, chocolate syrup, and truffle and coffee bitters.

Another pre-dinner cocktail that I particularly enjoyed was the Gente Feliz, which is made with Uchuva Golden Rush liquor, spearmint, orange juice, orange bitter, and prosecco. The back of the bar is dimly lit, and it carries a big-city vibe that fares well with the tropical background. It is one of my favorite places in all the resorts, and the cocktails are on par with some of the best resorts and bars in the world.

An Emphasis on Sustainability

Tabacón Thermal Resort and Spa is sustainability focused in all aspects. They’re mindful of everything from community outreach to single-use plastics. Their agenda is separated into three plans: protection of the environment and sustainable use of resources, community outreach and internal development, and cultural management.

It Has Adventure in its Backyard

You have to stay here if you want to zipline through a rainforest and hike through trails dodging different types of frogs and spiders. The resort partners with Jacamar Naturalist Tours, a company specializing in ziplining, white water rafting, and much more. The hotel’s location is perfect for any guest to take advantage of the mountain and its forest or the rivers that flow around it.

Most Rooms Have a View of the Rainforest

You’re only sometimes guaranteed a beach view at some hotels, but you’ll get a stellar view of the Arenal rainforest if you check in. There’s a high probability your stress level will dip when you wake up to the sounds and sights of a living rainforest. If you’re looking for a new destination to spend your holidays this winter, consider Tabacón Thermal Resort and Spa. It’s different enough from a beach resort that will leave an impression, but not too distant, where you’ll miss out on some favorite amenities. New England is loaded with alluring destinations, but the region featuring Rhode Island’s pair of gems, Newport and Narragansett, is truly special. These beautiful Ocean State cities are full of big waves, sunshine, shops, and friendly faces, as well as delicious seafood restaurants, locally owned businesses, and especially clean beaches where locals and visitors can swim and surf.

There is so much to do in these towns that planning a first visit can be a daunting task. Here are some tips that might relieve the stress of creating an unforgettable vacation itinerary.

Where to Stay

The Shore House is a Victorian mansion with modern amenities and gorgeous views of the beach. After falling asleep to the sound of the waves, you can wake up and relax in bed as the sun fills the room as the natural beauty of the shore beckons you outside. The King Shore Room has a big bathroom, seating area, and comfortable bed, as well as a coffee station and a fridge to keep leftovers, drinks, and snacks readily available to you.

The location is absolutely perfect, just a short walk from Narragansett Town Beach, but there are also bikes available for guests who want to explore (and beach towels are offered as well, which saves precious space in the luggage). When it comes to dining in and around the hotel, the on-site restaurant Sea Craft is ideal for grabbing a quick, convenient meal to start the day, or enjoying a cocktail after a long day of seeing the town, all while taking in the beachside views.

Where to Eat

Matunuck Oyster Bar  is widely considered one of the best restaurants in the Narragansett area. If you love oysters, a dinner here is simply non-negotiable. They run their own oyster farm on-site right on Potter Pond, with tours available for guests (for an additional cost, and you must sign up ahead of time). The menu covers a wide variety of cooked and raw seafood dishes, particularly featuring oysters, with options like the Passion Fruit Oysters on the half shell with salty salmon roe and crisp brunoise cucumber.

At the risk of invoking Bubba from Forrest Gump, guests can enjoy a variety of dishes and takes on this local staple. Oysters Rockefeller with spinach, pernod, breadcrumbs, bacon, and fresh herbs or Clams Casino with bell pepper, bacon, breadcrumbs, lemon, and parsley. Try the Grilled Oysters with garlic butter and fresh herbs, Bourbon Oysters with bourbon chipotle sauce, and the Oysters Rockefeller. They even have a creamy, rich Oyster Stew with rosemary cream, bacon, roasted sweet corn, onions, bell peppers and poached oysters. Don’t worry, though: there are plenty of New England classics on the menu like a Lobster Roll with chilled lobster meat, a light coating of mayo, and celery on a buttered roll, in addition to dishes like the Stuffed Lobster with plenty of sides as well.

The Nordic is a short drive into Charlestown and completely worth the trek—it’s a destination of its own. People drive from all over to experience this buffet, which is far from your average all you can eat affair. Guests will enjoy a seemingly endless amount of raw bar items, fresh shellfish, chowders, and other New England favorites.

The family-run seafood spot has other options like prime rib, barbecue, a salad bar, pasta, and fried seafood, but they’re known for having a bounty of steamed lobster and clams, crab legs, raw oysters and clams, chowders, bisques, shrimp, and more. Adults pay just $135, which is a steal, especially during tourist season in New England. If you even have room after that for dessert, their entire dessert table is filled with delicacies from local bakeries and fresh treats.

The lakeside property often has live music and entertainment, so visitors can wander the grounds to see the animals, take in the view, and relax before or after their meal. The Nordic is an experience that needs to be on your radar the next time you’re in Rhode Island.

Flo’s Clam Shack has been around for nearly 80 years, serving up some incredible (lightly fried) seafood dishes and chowders. Start with one of their heavy-handed rum drinks (although be careful because they can sneak up on you), while looking out onto the beach while waiting for your food on the upper deck. It’s hard to choose from this menu when nothing misses, like their famous Clam Cakes. They’re crispy, but soft on the inside, with juicy pops of fresh, briny clams. They’re perfect for soaking up chowders or can be enjoyed on their own.

If you’re having trouble deciding, the Flo’s Fisherman Platter is perfect to share. It comes with plenty of their juicy, whole belly fried clams, tender clam strips, calamari, sweet giant scallops, and fried fish, all of which is topped with a clam cake. It’s basically a little bit of everything that you definitely need to try, so this is a solid choice for about $36. The Oysters Rockefeller are also incredible, and the restaurant offers casual options like a spectacular Lobster Roll filled with fresh lobster meat.

Best of all, take in the beautiful views of Easton Beach while inhaling your clam strips. There’s a reason they’ve been in business for nearly 80 years, they know how to do fresh and fried seafood right. The clams are still juicy, the fish is fresh, and you can really taste the seafood without the coating overpowering it, but more enhancing it.

The Mooring Seafood Kitchen & Bar is another great spot in Newport to stop for a delicious evening meal. They have light starters like raw oysters and crudo with fresh scallops, radish, extra-virgin olive oil, citrus, and serrano that you snack on while sipping a cocktail. The Oysters Rockefeller are a must and the Stuffed Lobster with scallops and shrimp is perfect if you’re torn between indulging in a lobster dinner or a seafood stuffed lobster. You get the flavorful stuffing while still having some plain, steamed lobster pieces like the knuckles and a claw. It’s definitely the best of both worlds.

What to Do

Give yourself plenty of time to explore Newport. The shops seem to go on for miles, breaking off into all different blocks of local boutiques, souvenir spots, locally owned businesses, and some larger stores, as well. For a little pick-me-up, swing into Benjamin’s on the strip for their happy hour from noon until 2 pm daily. You can grab a beer and enjoy a few $1.50 oysters and $1.25 topnecks—a great deal for the area. If you’re there specifically on Tuesdays, they have Raw Bar Tuesdays with $1.50 oysters and $1.25 topnecks in addition to $1.75 shrimp, $1.50 Clams Casino, and $1.75 Oysters Rockefeller.

The Red Parrot has incredible lobster bisque and tropical cocktails, and be sure to grab a lavender iced latte (among other flavors) to go from Coffee Grinder. Not only is their coffee high-quality, but the owner is such a wonderful person who takes the time to connect with every single customer, local or not. She ran her coffee shop in Bannister’s Wharf for nearly 25 years and has since moved to the historic Perry Mill between Thames Street and Newport Harbor.

Narragansett Town Beach is just a short walk from the Shore House. The waves can be a little larger, so it’s a great spot for people who enjoy body surfing or boogie boarding (just follow the warnings from signs and lifeguards about potential undertows and currents to stay safe). If you’re feeling up to it, you can even take surf lessons, which are offered by several local companies.

For example, Peter Pan Surfing and SUP Academy is located down the street from the beach and offers lessons, and the instructors are so incredibly patient, kind, relaxed, and work with your level of physical ability. Be sure to have cash on you when you head to the beach to pay for the entrance fee during high tourist season and of course, a Del’s Frozen Lemonade for your walk back.

For about $20 for a round-trip ticket, you can take the high-speed ferry for the day from Point Judith to explore Block Island. Approximately 12 miles off the coast of Narragansett, you’ll find an island full of beautiful bluffs on the ocean, locally owned shops, water sports like parasailing and kayaking, among plenty of beaches to swim and sunbathe at throughout the day.

Meals include a starting dish like the Beetroot Tomato Tartare with quail egg and potato paper and the Wild Garlic Soup, and the mains and desserts like the Slow Roasted Lamb Shank with shallots, balsamic flavored gravy, thyme, garlic mashed potatoes, olive oil, and roasted vegetables, followed by the Passion Fruit Mousse Tartlet with coconut praline are full of flavor, colors, and textures. The culinary team does a beautiful job of picking dishes that celebrate the cities, working in dishes like crispy wiener schnitzel, crayfish, sachertorte, and seasonal asparagus soup to name a few.

Guests should not miss out on the homemade pasta dishes each evening. They’re always willing to do half portions, so you have a taste and still order a main dish. During the day there’s a café that has fresh fruit, sweets, charcuterie, cheeses, smoked fishes, soft pretzels, and breads, and more so you have something to pick at if you’re hungry. For a special evening, The Vintage Room offers a private dining experience that accommodates up to 12 people, delivering a 7-course dining experience with wine pairings.

The main dining area, Waterside Restaurant, has an amazing breakfast buffet full of fresh smoothies, green juices, cheeses, meats, eggs, French toast, bagels, fresh fruit, yogurt parfaits, bacon, and more. For lunch, it varies. On certain days, the Blue Deli serves a paired down lunch menu consisting of soups, burgers, salads, sausages, and lighter bites, while other days there are rooftop cookouts on the deck, where they serve giant grilled prawns, steak, potatoes, salads, spreads, pasta, and other delicious dishes.

Where You’re Going

Riverside Mozart specifically sails along the Danube River, with cruise itineraries ranging from several days to a few weeks. For the weeklong itinerary, this cruise began in Budapest, Hungary, and ended in Vienna, Austria. The ship offers incredible tours, celebrating each destination’s culture, food, and architecture while leaving room for guests to explore the area on their own. The ship even has 30 bikes on board that you can rent to cover more ground.

Budapest

Our tour began in Budapest, where the company offered a walking exploration of the Buda Side and Castle District, complete with an afternoon walk to take in the stunning architecture and a local guide. Guests can expect to see landmarks like the Matthias church and Royal Palace, among others. If you still have time to explore the city or prefer to explore on your own for the entire day, be sure to check out the local foods.

The Central Market Hall, Nagyvásárcsarnok is in the city center and filled with vendors selling stuffed cabbage, goulash, sausage, cheeses, salami, pickles, sajitos, and more. Be sure to visit one of the local bathhouses like the Szechenyi Thermal Bath for a soak and take a walk over to Szimpla Kert, one of the many ruin bars in Budapest with mismatched furniture, plants, art, and graffiti covering the walls.

Next door is the outdoor food vendor garden, Street Food Karavan Budapest, selling traditional dishes like goulash and chimney cake.

Bratislava

Through the Riverside Mozart, guests can book a walking tour in Bratislava, ending with a Slovakian beer tasting—a great way to explore the city! Throughout the tour through Bratislava, the guide showed us historical sites and local shops, pointing out colorful buildings and unique architecture.

We ended at Kolostor Sörfőzde (Kláštorný pivovar) where the group tasted Slovakian beers with a snack of meats, cheeses, and pickled veggies. We added on an order of bryndzove halusky, a traditional dish consisting of small potato dumplings coated in sheep cheese and topped with crispy bacon that melts in your mouth.

While in town, take a walk over to The Blue Church – Church of St. Elizabeth and stop by the Man at Work, Čumil statue for good luck (simply rub the button on his hat). The Most SNP, nicknamed the UFO Bridge spans across the Danube, so be sure to take a look while sailing out of the city.

Vienna

The Vienna panoramic drive and walking tour is a fantastic way to see and do a lot in a short amount of time. Explore the capital, Volksgarten, and palaces along the way, with some free time at the St. Stephen’s Cathedral to see the impressive gothic architecture and browse through the vendors and artists surrounding the church, selling everything from pretzel bread to handmade crafts and goods for souvenirs.

Stop into Aida for a Viennese malange coffee and sachertorte, before heading to the Naschmarkt to try wiener schnitzel, fresh oysters, baked goods, olives, tin fish, cheeses, and other Austrian treats. In the afternoon, the ship has a tour of Schloss Schonbrunn (Schönbrunn Palace), where the Habsburg rulers summered.

Grein

The Proud Fortress Greinburg Tour through Riverside brought the group up to Greinburg Castle, with stunning views of the Danube from above. The castle was built between 1488 and 1495, so there’s plenty of history behind the walls. Explore the corridors to discover rooms like the stone theater covered in pebbles from the river or the diamond vault. After the tour, walk down through the city to get some ice cream and take a bike ride around Grein.

Linz

Linz is more of an industrial city, quite busy with plenty of shopping, cafés, and restaurants where you can try the Linzertorte, which is a short cake base with a pastry, shell, nuts, lemon, and cinnamon. Although Linz is beautiful and certainly worth checking out, there is a full day Mozart Salzburg expedition offered through Riverside Mozart.

The trip provides transportation to and from Salzburg, a tour of the area where you can see Wolfgang Amadeus Mozart’s home, Fortress Hohensalzburg, UNESCO world heritage sites, The Cloak of Conscience and Tolerance statue, cathedrals, Friedhof Salzburg (St. Sebastian) cemetery, and plenty of scenes from the Sound of Music before exploring the town on your own. Visitors can taste local beer and Salzburger Nockerl (a triple peak soufflé with raspberry sauce) at Restaurant Stiegl-Keller and get some strudel at Cafe Würfel Zucker before shopping for souvenirs.

Melk and Dürnstein

On the last day of the trip, the boat will stop in two destinations: Melk and Dürnstein. The Baroque Wonder Melk Abbey in the Wachau Valley is a must see and the ship offers a tour of this incredible landmark. Browse through the Abbey, exploring the library and the church that is so magnificent it will take your breath away.

Travel further through the Wachau Valley before docking at Dürnstein to explore the town, searching for apricot treats like Wachauer marillenknödel, a traditional dish with a full local apricot tucked into dough, cooked, and then coated in buttery breadcrumbs and served with ice cream. The area is known for its wine, so after exploring the cobblestone streets to shop for apricot liquors and souvenirs, stop into Weingut Böhmer to taste some local wine. Exploring the Danube River with Riverside Mozart is such a treat. You can take mixology classes, listen to live music, or enjoy fine dining while sailing steadily and calmly to the next destination.

A trip to the Galápagos has long been the epitome of a bucket list experience, as it gives travelers the chance to observe marine and land animals in a pure environment. Getting There

INCA assists all guests going on board the Integrity in either Quito or Guayaquil with a quick overnighter to make sure everyone is on the mainland, ready to take the flight to Baltra the following day. After an overnight stay in Hotel Wyndham Guayaquil (or similar accommodations in Quito) an INCA team member will pick you up from the lobby and transport you to the airport where you will fly with EQUAIR into the Baltra airport in the Galapagos Islands.

Upon arrival, Integrity travelers will relax in the VIP lounge while the baggage is checked and cleared. Next, the group heads into the national park, where a bus takes everyone to the Itabaca Canal to board a small boat to the highlands in Santa Cruz. The wildlife discovery and tours begin the day you arrive, starting with the giant tortoises and exploring the Charles Darwin Research Station.

In addition to some fun activities on the first day, the group will try on wetsuits before enjoying a quick lunch in town with waterfront views of sea lions, pelicans, baby sharks, marine iguanas, and colorful crabs. After a day of adventure, the group will board the boat for the first time that is anchored in Academy Bay.

Before you unpack, the naturalist will go through what the tour is going to look like, what you can expect to see, safety, briefings, and room assignments. From there, after dinner, you’ll have plenty of time to unpack and relax, letting the boat rock you to sleep. The Eastern Island itinerary that they set up definitely packs in a lot of activity from hiking, swimming, kayaking, climbing, and more, keeping you feeling great throughout the trip.

What’s on Board

The Integrity is a luxury yacht that is the centerpiece of a customized experience that can host as many as 16 people. INCA and this vessel collaborate to give guests the best accommodations in addition to the adventure-packed itineraries. Each room boasts its own bathroom and plenty of space to move around, in addition to powerful air conditioning, which is wonderful to come back to you after a day of hiking. There are also TVs so you can put on a movie to fall asleep to at the end of the evening.

The dining room is elegant, and you get to take in views of the islands or the ocean as you enjoy healthy meals like fresh fish and homemade soups. The top deck has plenty of space for lounging and relaxing, in addition to a hot tub to unwind in at the end of the evening. They also offer laundry services for all guests, which is great if you’re trying to pack light and want to re-wear some pieces.

In addition to providing a luxurious place to stay and rest as you travel through the Galápagos Islands, the staff cares a lot about sustainability and the environment. The company separates waste into recyclable objects, non-recyclable objects, hazardous material, and organic items. The staff is even trained to understand environmental issues.

The crew is also passionate about creating healthy dishes, with plenty of fresh vegetables, beans, mashed potatoes, lean red meat, fresh fish, chicken, and desserts like fresh fruit with a sprinkle of chocolate. The breakfast buffet offers scrambled eggs, waffles, pancakes, fruit (like fresh papaya), sausage, bacon, plenty of juices, and cereals. The lunches are nice and light, similar to dinners, generally with lean protein and fresh veggies, with some kind of carb to keep you fueled and feeling great for the next adventure.

The itinerary will vary a bit based on the destination—this particular trip reflects stops along the Eastern Route—but expect early wake-up calls to seize the day before the heat gets too strong. Generally, the day starts around 5:30 AM with breakfast at 6 AM, heading out for activities bright and early. Each day consists of at least one hike and snorkel, in addition to other activities. In the evening, the group has dinner together, and the naturalist will go over what is to be expected the next day. He explains what the terrain is like, what to expect during the hike, what animals you might see, how long it will take, and he is more than happy to address any comments or questions you have.

Where You’ll Go

Santa Cruz Island: Exploring the Rainforest Highlands means unpredictable weather, so plan to have protection for your camera gear, a raincoat or poncho, and proper footwear for the day you arrive. Santa Cruz is the place to see a wide variety of plant species and tortoises snacking on guava and passionfruit. After seeing the tortoises, the group will head to Puerto Ayora to have lunch before visiting the Charles Darwin Research Center. With a day of exploring in the books, you’ll head onto the yacht to settle in for the evening, go through the safety briefing, and talk about the upcoming adventures.

Española: On day two of the eastern itinerary, you’ll stop in Española, particularly Gardner Bay in the morning. This area has a beautiful, white sand beach with crystal clear bright teal water. You’ll see plenty of seals lounging in the sun or running towards the water. After walking along the beach, guests will then prepare for the first snorkel. This is more of a low-key snorkel in a very calm area, so that the naturalist can gauge how strong of a swimmer the group members are and give you a taste of what you can expect to see coming up. We also played with a group of seals and saw plenty of colorful fish and turtles.

Later in the day, you will stop in Punta Suárez for a hike over rocky terrain to spot sea birds. This is your time to see the waved albatross birds, that can be observed between April and November. There’s even a chance to see their famous mating dance. This is also a great opportunity to see marine iguanas and other colorful birds like blue footed boobies.

San Cristóbal: The morning begins with a trip to Punta Pitt, a small beach that leads to a climbing hike to spectacular views of the island where you might get the chance to see all three booby birds, in addition to other wildlife. You can see mountain goats strolling along the hilltops, while down on the beach, seals play in the water with you while you take a dip after the hike to cool off.

After a morning hike, the group will get ready for a snorkeling adventure. Anything can happen, from playing with seals to swimming through schools of colorful fish. Guests will also have a little downtime before heading back to the boat for lunch and setting sail for Cerro Brujo. From there, the group takes a walk on the coral sand beach, watching shore birds dive down rapidly to catch fish while the sun sets in the distance.

Santa Fé and South Plaza: In the morning we arrived at Santa Fé to go for a hike on a white beach covered with sea lions and iguanas. We observed the Opuntia cactus and discovered many creatures before heading out to snorkel in the turquoise waters with plenty of fish, sharks, turtles, and more. There’s also an opportunity to kayak in the morning, and those who don’t want to kayak can explore the cliffs along the shore from the panga boat. In the afternoon, the boat anchors in South Plaza, where we see seven more land iguanas and a variety of birds, including the legendary finches.

Genovesa: In the morning, the group stops at Darwin Beach to explore the bird species. The beach appeared due to a sunken crater, and it is covered with a wide variety of birds from herons and warblers to red footed boobies and frigatebirds with the red pouch puffed up. The group will snorkel at least once a day, playing with seals and looking for hidden gems in all the cracks and crevices of the rocks and reefs for lobsters, eels, and other surprises.

We visited two snorkeling spots in this location, one that generally has hammerhead and Galapagos sharks, as well as huge schools of rays in deep water, and another location with much calmer water with fish, sea turtles, and other marine life. In the afternoon, the group hikes up Prince Phillip’s Steps to see colonies of booby birds—look for short-eared owls and watch the storm petrels whip through the air in the Palo Santo Forest.

Santiago and Bartolomé: In the morning, the group stops at Sullivan Bay in Santiago to explore the young lava flow and rock formations. After the hike, head out for the first snorkel of the day, where you can potentially see seals fishing in the water, white tip reef sharks, and maybe even some Galapagos penguins. In the afternoon, the boat anchors at Bartolomé, right near the famous Pinnacle Rock. A panga ride is next, on which you can see penguins along the shore before hiking to the very top of the island to take an incredible view of the bay, Santiago Island, Daphne Major and Minor, and of course, the sunset.

Rábida and Sombrero Chino: On Rábida, the day begins very early, as the group lands on a red beach first thing in the morning. As the lagoon came into view, speckles of hot pink appeared all throughout the water. There were so many bright, beautiful flamingos in the lagoon, in addition to incredible plant life.

The day was full of snorkeling excursions, where the group found a variety of stunning fish like the hieroglyphic hawkfish and the scorpion fish, among other marine life like sea turtles, white tip reef sharks, seals, and much more. In the afternoon, the boat anchored in the turquoise waters of Sombrero Chino. The snorkeling there is phenomenal, with turtles, eels, huge schools of fish, and other surprises.

We were extremely lucky to swim with Galapagos penguins, as they darted and dived around us, catching fish. We laughed joyfully underwater, taking it all in. It was the perfect way to end our snorkeling adventures. The day ends with a walk on the beach, taking views of the lava rock, before heading to Baltra to disembark the following day. With so many beautiful places to explore on this planet, the Galapagos Islands make for a truly special destination.

The bold wildlife, with seals looking you in the eye, blue footed booby birds walking with the group along the trail, penguins darting in front of you underwater, just as curious about you, as you are of them. You can just settle in and enjoy delicious dishes like the ribeye with fresh herb butter and grilled padron pepper, a side dish of potatoes with cheese foam and Jerusalem artichokes, and a cocktail like the Lúpina with lavender gin, blanc vermouth, and Creme de Violette.

The ambiance at Monkeys Reykjavik is stunning with beautiful floral patterns, striking furniture, art decorating the walls, and unique light fixtures. The food is as impressive as the décor. The wagyu nigiri with foie gras and garlic melts in your mouth with the even marbling of fat. The rack of lamb with pepper polenta, roasted corn salsa, and miso hollandaise sauce was perfectly cooked and the fresh scallops and foie gras with crispy chicken skin was the perfect blend of textures. Save room for the Monkeys mandarin, their famous dessert.

Fish Company (Fiskfélagið) is a wonderful option for trying some local dishes, like the sherry marinated reindeer carpaccio with cepes purée, crispy oyster mushrooms, foie gras, hazelnut, and parmigiano. The fresh salad with deep fried langoustine and seared tiger prawns in a creamy garlic dressing (with salty mixed olives, cherry tomatoes, and parmigiano reggiano) and creamy lobster soup (with langoustine and chestnut paste, apples, and marinated celery) are two delicious dishes that let the Icelandic lobster, langoustines, shine.

With all the delicious food to try in Iceland, a hot dog might not be first on your list, but a visit to Bæjarins Beztu Pylsur should be. The dogs in Iceland aren’t what you may think, as they are primarily made up of lamb with a little high-quality beef and pork. The famous stand dates to the 1930s, and these well-known dogs are doctored with raw onions, crispy fried onions, and ketchup on the roll, and after tucking the dog into the bun, it’s then topped with a remoulade and mustard sauce.

Íslenski barinn is a great place to stop if you want to try some truly unique Icelandic cuisine, including Viking-inspired foods like fermented shark and dried fish with butter. There are dishes like puffin on Icelandic crumpet with berries, remoulade, fried onions, pickled red onions, and chili peppers and fin whale on Icelandic crumpet with langreud, pickles, remoulade, onion rings, and parsley.

For dessert or a sweet snack, Baka Baka has a wide selection of donuts and treats that can’t be missed. The raspberry donuts filled with a raspberry cream were phenomenal, the perfect pairing for a latte on the go.

What to Do

The Puffin Express Tour is barely a 10-minute walk from the hotel in Reykjavik, and it will take visitors on a boat trip to puffin island (aka Akurey). It doesn’t take long to get to the site, where you will see so many puffins floating in the water, flying at speeds of nearly 55 mph, and settling in, nesting on the rocks along the water. It’s such a special experience, and worth every penny. If you want to fill your itinerary with wildlife encounters, they also offer a Whale Watching Excursion, on which guests voyage in search of humpbacks in the wild.

When you’re visiting Iceland for the first time, you have to make time for a Golden Circle Express Tour. This special bus trip takes guests to famous sites along the circle, like the geothermal Geysir to see activity at Strokkur, Thingvellir National Park, and Gullfoss with an opportunity to hike into the mist of the powerful falls. The café inside the visiting center at the Geysir has some delicious fish stew, loaded with huge, tender pieces of cod, perfect for a quick bite before jumping on the bus.

There’s a lot to see in Iceland and it’s difficult to fit it all in, but I can’t recommend the South Shore Excursion enough. You hit sites and destinations while enjoying the ride, taking in the stunning landscapes and visiting multiple Foss waterfalls. You’ll also ride through Vík, a small village boasting boulders and cliffs. Stop along the way at sites like Seljalandsfoss and Skógafoss to hike around the waterfalls, legendary Eyjafjallajökull, and the black sand of Reynisfjara (just be cautious of the sneaker waves that give the beach it’s dangerous reputation) where many photos will be taken of the Reynisdrangar rock formations.

A relaxing spa has been added to the industrial area near Kópavogur, and Sky Lagoon begs to be explored and enjoyed. The geothermal spa has an infinity pool with a waterfall and a seven-step ritual involving steam rooms, a cold plunge, body exfoliator, sauna, mist, and hot showers. The experience leaves your skin silky smooth as you head back to relax in the warm water with a drink in your hand.

When you’re in Iceland, the Blue Lagoon is also an absolute must. This natural body of water is located in a lava field and has a soft, baby blue hue to it from the minerals, leaving your skin feeling radiant. Apply the face mask and grab a drink from the bar, as you can be healthy and order a green juice or treat yourself to a beer, before walking around and exploring the lagoon.

And don’t forget to explore Reykjavík. Set aside time to walk around the city and you’ll encounter coffee shops, local boutiques, restaurants, and exciting landmarks like public murals, the Sun Voyager, the Hallgrímskirkja Church, and Rainbow Street. Stop into a local cafe to try a ponnukokur, an Icelandic pancake similar to a crepe.

Wedged in between, you’ll find books on mixology—Speakeasy and The Bar Book, specifically—while a current volume of Gray’s Sporting Journal abuts two issues of Condé Nast Traveler.

Is the southern Belizean property a fishing camp? A gourmand’s retreat? A luxuriously appointed eco-lodge? While the library suggests it could be any of those things, Copal Tree Lodge is, in fact, all of them. What once began as an understated fishing lodge—a property that attracted adventurous and enthusiastic sport fishermen (and still does, albeit to a lesser extent given the lodge’s evolution in recent years)—Copal Tree Lodge is a boutique resort perched on top of a bluff and nestled into the heart of a 16,000-acre estate that today includes an organic farm and a sustainable rum distillery.

The resort offers guests easy access to a lineup of seafood shanties and bars set only a few hundred yards from the Caribbean Sea in the town of Punta Gorda, less than 20 minutes to the south. And while a visit into town offers a glimpse into the local culture, which has its merits, guests likely won’t feel compelled to venture away from the estate for long—nor should they. From its dock positioned along the Rio Grande River, the lodge runs snorkeling, river fishing, and sunset cruises; while serious fishermen who are yearning to cast flies for bonefish, tarpon, and permit can set sail from the nearby marina in town.

“Fly fishing is a serious sport,” says Waluco Maheia, the lodge’s assistant manager. “River fishing can be more relaxed.”

Of course, notable guest experiences don’t require ventures out onto the water. Those looking for a day (or multiple days) of leisure, will be drawn to the lodge’s Jungle Spa, while Copal Tree’s small, teardrop-shaped pool provides an ideal oasis for quiet dips and peaceful lounging. Guests can also venture down the hill for guided tours of the organic farm, or they can participate in a bean-to-bar chocolate class. And for those who take immense pleasure in flavorful sips and bites, the lodge offers a farm-to-table, all-inclusive package ($150 add-on per night for each adult guest), which covers meals featuring ingredients grown on the 3,000-acre farm, as well as stirred and shaken cocktails highlighting a trio of estate-produced rums.

Annual production at the Copalli Rum distillery currently sits around 42,000 cases, and plenty of that rum makes its way up the hill to the lodge, which means guests will never ask the question that Johnny Depp famous quipped in the first Pirates of the Caribbean film: “Why is the rum gone?” Guests are also encouraged to schedule distillery tours, not to mention mixology classes and guided tastings.

During the latter, Maheia—who also serves as Copalli’s brand champion—prefers to learn from guests which flavors and aromas they identify. He doesn’t like to dictate what they’re likely to smell or taste. “We like to make this part of the tasting very interactive,” he explains. “And, of course, we’re going to name the dominant [flavor] profiles within the spirit, and I’d like to know what you all think is in there. What kind of flavors do you get?”

The white rum elicits responses that include prominent citrus notes alongside hints of banana and lychee. “So, what we’re getting is some tropical fruits,” Maheia acknowledges. “We’re definitely getting pineapple and banana and citrus; we’re getting hints of vanilla; and then you get some grassy notes in there, a bit of vegetation, something that compares to lemongrass.”

The barrel-rested expression, by contrast, introduces aromas of leather, burnt orange peel, and cola, which transition to baking spice flavors and tobacco on the palate. And Copalli’s Cacao rum delivers the roasted (almost bittersweet) aromas that are commonly associated with dark chocolate. When sipped, the rum offers up equally rich cocoa flavors with a pleasingly long, creamy finish.

All three spirits are the handiwork of Ed Tiedge, Copalli’s first master distiller, who learned the distillation trade at a family-owned cognac house in eastern France several decades ago. The rums also serve as an homage to the hundreds of acres of organically cultivated sugar cane that grows almost in the distillery’s shadow (as well as at off-site locations nearby).

“Our role as the rum makers is to transition those flavors from the field to the bottle, to not mess up what the farm has created,” Tiedge says. “That’s really the secret—exceptional sugar can juice. You have to start off with a high-quality product in the field, and if we’re good stewards of that juice at the distillery, you’re going to get a pretty good-tasting rum at the end.”

That good-tasting rum is proudly on display as the foundational spirit for 15 cocktails served at the rum bar inside Copal Tree Lodge’s clubhouse. Some are shaken with allspice or sage leaves; others include freshly squeezed pineapple juice or hand-cut chunks of watermelon; and some are sweetened with a variety of infused syrups, including fresh ginger and vanilla. All, however, provide a distinctive taste of the estate, which is yet another example of the property’s success.

Ultimately, Copal Tree Lodge accomplishes the most important objective of any luxury resort, especially one set in such an exotic locale. It delivers a dynamic and authentic sense of place—one that, in an unusual twist, can also be poured directly into your glass.
