There’s rarely a tropical destination I have visited that doesn’t make me think, “Yeah, I could live here,” but it wasn’t until the first time I visited Mayakoba that I really meant it. To the average golfer, the phrase “World’s 100 Greatest Golf Courses” might not mean much, but for a lot of us it is the annual reminder that Golf Digest has done all the work in creating the ultimate bucket list. When you scroll this marvelous celebration of international designs and see the photos from No. 1 Newcastle, Northern Ireland, to No. 100 Gleneagles Hotel in Scotland, it’s impossible not to want to book a trip so you can cross one off.

However, for many of us, one might be it. With courses in Japan, Dubai, New Zealand, and many other exciting destinations, we must accept the fact that our budgets and schedules will make choosing a truly difficult task. But what if a course is located near a resort community that is an ideal destination for any type of vacation? That could certainly make it easier, if it means convincing the family, that special someone, or your best friends that you know just the place for the big getaway.

For me, that place was Pueblo Bonito Pacifica Golf and Spa Resort, a terrific property that is as luxurious as it is entertaining. It is also home to the No. 87 entry on Golf Digest’s 2022-23 list: Quivira Golf Club, a Jack Nicklaus design that opened in 2014 and instantly became a dream course for players of all skill levels. Even having heard of its reputation, I wasn’t prepared for this masterpiece.

And things are only getting better here, as Nicklaus is working on a second course and he’s promising that it will be “stunning and equally as spectacular” as Quivira G.C. Is that even possible? I can’t imagine so, but I do know that no matter how wild his first design may be, it shouldn’t scare away the average golfer.

Prepare to Make a Day of It

Quivira Golf Club is as much an epic journey as it is a round of golf. This is a sprawling course with large gaps between holes, like the long ride between holes 4 and 5, 6 and 7, and especially 15 and 16, as those last two are set on the west side of the property like they’ve been shunned from the rest. I like to think Nicklaus left so much room over here so frustrated golfers can shout their profanities all at once without disturbing the local wildlife.

In all seriousness, though, the expansive layout is my favorite thing about QGC because it allows for magnificent views at every turn, and some of the holes even feel like they’re not even on the same course. I’ve heard other golfers say they want the most bang for their buck when they’re playing golf on vacations, and this one is worth every penny and then some. So, sit back and enjoy the ride… even if you’ve lost a dozen balls by the turn.

Don’t Sweat the Tough Stuff

No matter how good the player, this is not an easy course. In fact, I’d love to see a PGA event held here so we can all watch and marvel at how the pros would play it. But don’t let the challenge scare you away. The key for golfers of any skill level is to treat a round here like a vacation in general: leave the stress at home (or in the clubhouse) and just appreciate the opportunity to play one of the best courses in the world.

When you’re below average or a beginner, a difficult design can be a deterrent for continuing, so it is crucial not to let the lost balls bother you. And there will be a lot, especially when you’ll want to hit at least three shots on the Par 3 13th hole, with its breathtaking gap between the tee box and green. So, once you’ve stepping into that first tee box, take a deep breath, do a 360-degree twirl to take in the first sights, and repeat after me…

“It’s Time to Be Creative”

Once I put the frustration in my rearview, I realized the best course of action is to spend a little more time examining the layout of each hole and finding ways to take advantage of the designs. You know, what good golfers do. Granted, there are plenty of obstacles you won’t be able to avoid and the curves run wild on many of these holes, but common sense might actually trump talent at Quivira.

For example, one of my favorite holes on the planet is the Par 4 5th, which the better golfers in my group Bryson’d to try and make the green in one. With a slower swing speed and a tendency to hit low runners for safer shots, I focused on sticking to the right side, keeping it on the fairway, and running it down the remarkable slope. A medium chip and two putts later, I had my only par of the round.

I more than earned my phenomenal paloma at the first course snack shack.

Shorten Your Game

While most of the rest of my game was lowlighted by double bogeys and replies of “I forget” when pressed for my actual score, I was at least able to keep the ball on the fairways by playing shorter. Three-quarter and half-swings might’ve put my ball well behind those of my cohorts, but nobody wants to hit out of the rough or sand here. Hell, the sand is at least manageable—I should know as I spent enough time there to use Shooter McGavin’s Hasselhoff joke multiple times.

The rough, though, is especially bad, and the stuff beyond that is no man’s land. Even very good golfers will be spotted kicking out of the thickness, so don’t be too hard on your buddies when you catch them picking a friendlier spot to hit from. Save the heavy roasting for when you catch them doing that tossed ball trick from a bunker.

Prepare to Storm the Shores

At most courses I play during my travels, I’m usually teamed with strangers, which is awesome because I love having someone else’s perspective, not only for golf tips, but also seeing the courses through their eyes. But with my professional mindset, I’m too often caught up in the moment of enjoying the scenery, so I feel like a broken record when I say things like, “Can you believe this is real?” and “How amazing is this view?”

On this course, however, that’s all anyone in my group of eight said. The elevation allows for the best photo opportunities, so be prepared to take selfies and group pics on every tee and green. One element that people might miss without a proper heads up from the staff is that the sprawling beach that’s best seen from the green on the 10th hole is the spot where the battle for the Trojan beach was filmed for the movie Troy.

So, at the very least, you can tell people you’re the Achilles of scoring 110.

Following a $120 million investment over the past three years, RLH Properties has announced the extensive renovation of Mayakoba, a 595-acre ecologically diverse resort and residential destination home to four upscale hotels, including the Andaz Mayakoba, Banyan Tree Mayakoba, Fairmont Mayakoba, and Rosewood Mayakoba, as well as the championship golf course El Camaleón Mayakoba.

Mayakoba, a pioneer in environmental stewardship and one of the original high-end, low-density resort developments in the Mexican Riviera, offers significant renovations to Banyan Tree, Fairmont, and Rosewood as well as the opening of a new Dive and Water Sports Center with the Mayakoba Dive School.

“This comprehensive, destination-wide enhancement project represents the largest investment in Mayakoba since the resort’s inception,” says Borja Escalada, CEO for RLH Properties. “With these renovations, we are confident that Mayakoba will only continue to exceed expectations for leisure travelers who have come to know and love the property, while introducing new amenities and offerings to further cement its reputation as a leading luxury destination in the Riviera Maya.”

Improvements to the entire Mayakoba destination include the completion of Banyan Tree Mayakoba’s resort-wide restoration and the debut of its floating lagoon villas, which are only a few steps from the beach. These seven villas each include one bedroom, a two-story design, and a heated rooftop plunge pool. As part of the improvements, the resort also launched 34 brand-new beachfront pool suites and a completely revamped beach club last year. A larger interactive Rangers Club for children, an extended oceanfront pool, a restaurant with a raw bar next to it, a beachfront lounge, and massage rooms with Banyan Tree Spa unique treatments are all available to guests at the new Sands Beach Club.

Fairmont Mayakoba guests may now take advantage of the resort’s extensive, multi-million dollar property-wide restoration, which is highlighted by the spectacular new beach club Maykana, one of the biggest in the area. Five different eating options can be found at Maykana, along with the only rooftop bar in Mayakoba with views of the Caribbean and an infinity pool with five separate cabanas. A sophisticated new guest experience is provided throughout the resort by updates to 188 guest rooms and suites, the opening of two new restaurants (the Italian trattoria Bassano and the Mexican-inspired La Laguna), and significant renovations to the Tauro steakhouse.

Late in 2019, Rosewood Mayakoba unveiled the complete renovation of its 129 on-property accommodations, adding eight specialized wellness suites and fully upgraded three- and four-bedroom Presidential suites. A private salt treatment pool, outdoor tranquility pavilion, reflexology fountain, improved sleeping aids like a circadian light, a wellness station with alkaline water, and a devoted wellbeing butler are all included in each loft-style Wellness Suite. Aqu Me Quedo, an adults-only beachfront oasis with a lively and playful atmosphere, and Zapote, an open-air hacienda-inspired bar devoted to the deep culinary traditions and agave spirits of Mexico, were also added to Rosewood Mayakoba during the resort’s renovations. The resort introduced an opulent, 16,300 square foot Founder’s Villa in early 2022 for the pinnacle of exclusive luxury rooms.

Andaz Mayakoba, the most current resort to operate in Mayakoba, launched in 2016 and provides some of the culinary destination’s most avant-garde programs over five different outlets. VB (Vegan Bar), an all-vegan concept serving wholesome juices and smoothies during the day and a range of fresh and seasonal foods for lunch, is a recent addition to the property. VB joins Andaz Mayakoba’s other noteworthy dining establishments, which also include Sotavento, which provides a toes-in-the-sand dining experience with a casual ambiance, wood-fired preparations, and Mediterranean flavors, and Casa Amate, a sophisticated concept serving a variety of Latin American cuisine in a distinctive space created to resemble the eclectic home of a passionate traveler. Gua México Gastronómico has listed Sotavento and Casa Amate among the Top 250 Restaurants in Mexico.

Mayakoba continues to prioritize outdoor activities in addition to the improvements made at the numerous resorts with its new Dive and Water Sports Center, Mayakoba Dive School, and a sizable beach restoration project. Mayakoba’s Van Dutch Yacht offers all the luxury, exclusivity, and power a 55-foot yacht can offer guests wishing to explore the Caribbean’s crystal-clear waters and the second-largest barrier reef.

When it comes to the cuisine and cocktails, the key to making the most of a Mexican vacation is simply starting a conversation. The best hotels and resorts will always have fun, delicious, and creative dishes on the menus, but if there’s a certain ingredient or element you prefer, don’t be afraid to let the server and chef or mixologist know, because there’s a strong chance they’ll be willing to whip something up for you.

At least that’s almost always the case with cocktails on my various adventures. A regular margarita or mezcalita is typically fine, and if it’s made with all fresh juices then it’s even better. But there’s almost always a very special recipe in someone’s head, and all it takes is a simple request to make it happen. 

For example, when I asked a couple ultra-cool Mexican hotels to knock my socks off with their best recipes for Cinco de Mayo, they did not disappoint. Good luck making these, and feel free to tell your friends and guests that you invented them all by yourself. We won’t share your secret.

The Tropical Diamond

The Place: Hacienda Encantada Resort and Residences

Ingredients:

  • 1.5 oz White rum
  • 3 oz Orange juice
  • 1.5 oz Mango juice
  • 0.5 oz Grenadine
  • Tajín fruit seasoning

How to Make It:

Pour all ingredients into a blender and add ice to mix well. Rim glass with tajin salt and garnish with a pineapple slice. Pour blended mixture into glass and enjoy!

South Margarita

The Place: Pierre Mundo Imperial

Ingredients:

  • 1.5 oz of Tequila reposado
  • 0.5 oz of Tequila liqueur
  • 1.5 oz Mixture of lemon and lime juices
  • 1.5 oz Simple syrup
  • Splash of whiskey
  • Twists of orange, lime, and lemon peelings
  • To garnish: grasshopper salt and two margarita flowers

How to Make it:

Decorate your martini glass with a rim of grasshopper salt. Mix the tequila reposado, tequila liqueur, lemon and lime juice, simple syrup and twists from orange, lemon, and lime in a chilled shaker. Shake the mix prominently, pour the whiskey into glass, and then pour the contents of the shaker using the strainer. Garnish with two margarita flowers and enjoy!

One of the most difficult things for me to deal with when returning home from a trip is trying to recreate all the creative cocktails I’ve tried at various resorts. And no spirit causes me more problems than my favorite: mezcal. I don’t know if it’s the water in my ice, air in my kitchen, or the angle of my pours, but I am never able to replicate the many styles of margaritas, palomas, and signature gems that have been concocted by some of the most brilliant mixologists in the Caribbean and Mexico.

But I’d be a fool to stop trying, especially with Cinco de Mayo upon us. This year, instead of trying to master the Mezcalita from Banyan Tree Mayakoba or any of my favorites from the JW Marriott Cancun, I turned to the creative minds from four of my top spirits choices—Tequila Bribón, Mezcal Gracias a Dios, Próspero Tequila, and Tequila Cenote—for their picks that we can all try at home. After all, you can’t ruin something you haven’t tried anywhere else.

Mezcal Mule

Ingredients:

  • 2 oz Gracias a Dios Mezcal Espadín 
  • 1 oz Lemon juice 
  • 0.75 oz Agave syrup 
  • 0.75 oz Ginger juice 

How to Make It: 

Combine ingredients, stir, and top with ginger beer.

Oaxacan Hemmingway

Ingredients:

  • 2 oz Gracias a Dios Mezcal Espadin Joven
  • 1 oz Grapefruit juice
  • 0.25 oz Maraschino liqueur
  • 0.25oz Simple syrup
  • 2 Slices fresh jalapeno

How to Make It: 

Combine all ingredients in a shaker with ice. Shake to combine and chill. Double strain into highball glass over fresh ice. Garnish with a grapefruit slice.

Pineapple Playa

Ingredients:

  • 1.25 oz Bribón Blanco Tequila
  • 0.5 oz Bauchant Orange Liqueur
  • 2 oz Fresh pineapple puree
  • 0.5 oz Lime juice
  • 1 tsp Mango puree real
  • 1 oz Soda water

How to Make It:

Combine all ingredients except soda water in a shaker with ice. Shake to combine. Pour entire shaker contents into highball or rocks glass, top with soda water and ice. Garnish with slice of pineapple.

Jalapeno Avocado Margarita

Ingredients:

  • 4 oz Tequila Bribón Blanco
  • 2 oz Agave nectar (cut 50/50 with water)
  • 2 oz Fresh squeezed lime juice
  • 1/2 Avocado, peeled and mashed
  • 2 Slices jalapeño
  • Lime wheels, for garnish
  • 1 Cup ice, plus extra for serving

How to Make It:

Fill two rocks glasses with ice. Set aside. Place ripe avocado and jalapeno slices in a cocktail shaker. Muddle ingredients until they’re thoroughly mashed. Add remaining ingredients to the cocktail shaker and shake vigorously. Strain into the two rocks glasses. Garnish with the remaining lime wheels.

The One

Ingredients:

  • 2 oz Próspero Reposado
  • 1 oz Rose cordial
  • 0.75 oz Lime juice
  • 1.5 oz Tonic water
  • 1.5 oz Club soda

How to Make It:

Combine Próspero Reposado, rose cordial, and lime juice in a rocks glass. Fill the glass with ice and top with the tonic and club soda. Garnish with a lime wheel and a small rose.

French Marg

Ingredients:

  • 1 oz Próspero Blanco
  • 1 oz Chambord
  • 2 oz Grapefruit juice

How to Make It:

Combine all ingredients into a shaker. Add ice and shake vigorously for about 10 seconds, or until the shaker is cold. Pour into a martini glass. 

Mood Up Spritz

Ingredients:

  • 1 oz Próspero Reposado
  • 1 oz Hibiscus tea
  • 0.6 oz Raspberry syrup
  • Blood orange bitters 
  • Kefir water

How to Make It:

Pour each ingredient into a wine glass, with each ingredient building on the next. Stir drink two times and then garnish with two slices of blood orange, a sprig of rosemary, and a raspberry. Top with the bitters and kefir water.

Olé Chamoy

Ingredients:

  • 1 oz Stoli Chamoy
  • 1 oz Cenote Blanco
  • Jarrito’s Grapefruit Soda
  • Tajin

How to Make It:

Rim a collins glass with tajin. Add Stoli Chamoy and Cenote Blanco Tequila, fill with ice, top with Jarritos Grapefruit Soda, and finish with a grapefruit wedge.

Bingo, Mango

Ingredients:

  • 1 oz Stoli Chamoy
  • 1 oz Cenote Reposado
  • 0.75 oz Lime juice
  • 0.75 oz Mango puree
  • Tamarind for garnish

How to Make It:

Add Stoli Chamoy, Cenote Reposado, mango puree, and lime juice to a cocktail shaker and shake until chilled. Pour into rocks glass over fresh ice. Garnish with Tamarind/Chamoy powder straw.

Tropical resort-goers often fall into one of two camps: those who prefer the surf and sand, and those who’d rather lounge by the pool. But sometimes the choice is more topaz and turquoise than black and white.

I mused on this thought as I gazed out at the pounding surf from my infinity plunge pool at Cala de Mar Resort and Spa, a luxury beachfront resort in Ixtapa, Mexico, perched on the Sierra Madre cliff. (Installing myself in my private pool was a daily ritual during my stay, when a late-afternoon delivery of ice-cold bottles of Pacifico and a basket of chips, salsa, and guacamole always arrived just in time for happy hour.)

But back to the shoreline. It was mesmerizing to watch the cerulean water continually crash over the jagged outcrop and then retreat. And from my spot curled up on a lounge chair on the terrace, the rock formations jutting out of the water closer to the horizon reminded me a little bit of those that dot the Andaman Sea in the Thai islands. But the rocky bluff that makes up the beach at Cala de Mar is most definitely designed to swoon over rather than swim in. And that’s perfectly fine.

I am generally more of a “beach fan” than a “pool fan,” so I’ll admit that I was initially a little disappointed to discover I wouldn’t be able to dip my toes in the sea or set up under a shaded palapa. But I quickly realized that a peek at the Pacific is never far away—even during a private check-in in the lobby, where thatched roofs and bamboo sills frame open windows whose jaw-dropping views made it difficult to focus on my personal assistant’s queries about restaurant reservations and scheduling activities.

The nine-level resort was envisioned in an adobe style by architects Enrique Muller and Santiago Aspe, with curved lines that mirror the fluidity of the ocean and an openness throughout that brings in the breezes and spotlights the scenery. Satin hardware, matte hardwoods, and stucco in warm earth tones counter the intense sunlight, walkways are lined with palm trees, tropical foliage and stone fountains, and bougainvillea vines with shocking fuchsia blooms are neatly trimmed in planter boxes on ledges and crawl in-between accommodations.

Because the cliffside is so steep, I boarded a funicular, or inclined cable car, to get to and from my suite. Most of Cala de Mar’s 59 accommodations, all stacked facing the Pacific, come in two categories: Cliffside Ocean Front Suites and Romance Deluxe Ocean Front Suites, the main difference being the size of the floor plan. When I opened the front door to my deluxe suite, sparkling azure waters stretched the length of my expansive terrace—a sight that never got old. Lounge chairs and a hammock in the sun were joined by a wicker conversation set and a daybed in the shade. Tiles in my infinity pool were cleverly colored so I couldn’t tell where the pool ended and the ocean began. 

Inside, my suite was appointed with a king-sized bed with a seating area, a complimentary minibar, a walk-in shower (with a window to the ocean), dual vanities, and a huge changing area with lots of hanging space and shelves with baskets. A woven beach bag, floppy hat, and scarf set out on the table were mine to use during my stay and take home as a souvenir.

I probably could have stayed in my abode for the entire sojourn, and if you are looking to hole up for a few days with complete privacy and no interruptions, this is the perfect place to do it. But there is a lot to explore on the property and beyond—Cala de Mar is located just 15 minutes from the town of Ixtapa.

If the setting itself somehow doesn’t induce serenity, the wellness programming should. Mats for morning yoga are set up on an open terrace; I selected one of the huge rocks far out in the water as my drishti, or focal point, as I balanced in airplane pose. A new area called the Zen Zone is a breezy, relaxing open-air space for reading, meditating, or taking a tech detox for an hour or two to be lulled by the waves. And a private cove on the beach itself can be set up with a pop-up picnic, stargazing or a massage.

If you are truly looking for a detox, an hour in the “sweat lodge” known as a temazcal ought to do it. The ritual dates to the times of pre-Hispanic Indigenous people in ancient Mesoamerica when it was used as part of a curative ceremony to purify the body after heavy work or exercise. Guests convene inside a circular dome, where water is ladled onto hot volcanic rocks to produce steam; breathing in the aromas from added herbs including sage and copal lends even more of a cleansing effect. (My claustrophobia always keeps me from partaking in this activity, but friends have told me it’s quite impactful.)

More my speed was the tranquil Spa El Capricho, whose five treatment rooms are each named for a local flower and look out to the dreamy coast. An Amuzgo Herbal Massage began with a floral foot bath ritual, after which herbal and dried poultices activated by heat were applied to ease sore muscles and encourage emphatic draining. Body wraps use local botanicals like toronjil, a lemon-scented red flower integral to Aztec culture thought to improve mood and clarity, and nopal, the prickly pear cactus that’s rich in antioxidants and touts anti-inflammatory benefits.

If you want to retox after all that detoxing, the mezcal class at Terrace Bar is one of the better ones I’ve experienced at a resort. Orange, apple, and grapefruit slices are set out on slate boards along with sea salt and spices; imbibers are encouraged to use the molcajete to mix up their own perfect blend, while the bartender guides you through perfect pairings from the bar cart. (If you let on that you are a mezcal fan, you might get a few tastes of some rarer expressions; their iron-gated Tequila Room stores 65 of the region’s best bottlings.) My guide also mixed up a Cantarito, with mezcal, citrus juices, grapefruit soda and a sprinkle of sea salt and tajin, served in its namesake traditional clay cup. 

After all those agave spirits, head to The Seafood Market, which I found to be the best dining experience here. Tables are set on a lower terrace, just above the scraggy brush and jagged coastline that’s lit up after dark. A small blackboard lists the fresh catches of the day—tuna, dorado, red snapper, prawns, local lobster—which are displayed on ice. Select your protein, and it’s grilled and served with rice and fresh vegetables. It’s a perfect example of letting the simplicity of great ingredients shine.

Terrace Bar is tops for a pre-dinner Margarita; best of the bunch is the refreshing Mujer Elegante, with blanco Tequila, orange liqueur, cucumber, lime, and agave. I remained at my table al fresco to taste my way through the menu, which focuses on sushi and ceviche. Pistachios added a pleasant crunch to smoked beet salad with goat cheese, tuna tostadas picked up some tang from tamarind ponzu and Asian coleslaw, and pickled cherry tomatoes added a zesty pop to the colorful, flavorful salmon poke bowl. Don’t fill up on raw fish, though; save room for a slice of the decadent mascarpone cheesecake named for Frida Khalo, with peanut crumble, chipotle strawberry, and caramel foam.

A romantic dinner para dos (or uno, in my case) set up as close to the beach was the only experience that somewhat missed the mark. The setting—literally right next to the crashing waves—was spectacular, and I loved listening to and watching the scene in-between bites. The too-yellow bulbs on the string lighting could use a more subtle upgrade, though. And since my server had to navigate a steep and long walk every course, the pistachio-crusted tuna was woefully overcooked by the time it arrived at my table, and panna cotta was rubbery instead of smooth and creamy. 

Red snapper ceviche with serrano chili slices and red onion better withstood the trek, and frozen Tequila shot-cicles were a fun start to the experience. And you just can’t top dining so close to the water that you get hit by a little seaspray.

During breakfast at Las Rocas, try Mexican specialties like salbuta benediction, where a fried corn tortilla is stuffed with pork belly, black beans, a poached egg, hollandaise sauce, hoja santa, and mustard seed, or chilaquiles rojo or verde, topped with shredded chicken and a fried egg.

I didn’t even have to leave my lounge chair for lunch; shrimp tacos wrapped in thin jicama rounds—a perfect, crunchy alternative to tortillas—were dressed with cilantro dressing, avocado, and serrano and delivered right to my lounger next to one of two larger infinity pools. It was difficult to believe, but the view here was somehow even better than that from my own private plunge paradise.

In vacation world there are beach people and there are pool people—and if you’re in the latter camp you probably prefer a comfy chaise that’s a short stroll away from a fabulous pool. Perhaps it’s in a stunning oceanfront infinity pool where you practically feel one with the sea or maybe it’s in a lagoon-style oasis that’s perfect for family fun. Does it have a swim-up bar? The Morgan Resort and Spa, St. Maarten

Is it a beach or a pool? Honestly, it’s a little of both and guests haven’t been able to stop posting pics of it ever since The Morgan Resort and Spa debuted on St. Maarten in June 2021. This pool has a waterfall, slide, grotto cave, underwater music system, and Bar M Pool Bar (a swim-up bar with a blackjack table), along with private poolside cabanas. 

The 124-room contemporary-style resort is located just minutes away from Maho Beach with its famous Sunset Beach Bar and overhead jets landing at Princess Juliana Airport, so if you’re a pool lover and an aviation geek (the resort has a rooftop Observation Deck), this might be the spot for you. 

Silversands Grenada

Silversands Grenada, a relative newcomer on this lush Southern Caribbean island known for its flavorful spices, features 43 rooms and suites designed with a sleek, modern aesthetic inspired by nature. But the true showstopper is the resort’s daybed-lined infinity pool that at 330 feet is the longest in the Caribbean and stretches from the lobby to the soft sands of Grand Anse Beach.

Secrets Moxché Playa del Carmen, Mexico
